Points to Remember about Barbecuing
- Heat the barbecue until it is very hot.
- If using charcoal, let the coals burn down until they are ashy-grey on the surface.
- Never squirt lighter fluid on to an open fire.
- Brush the meat, rather than the grill, with oil.
- Do not turn the meat until it has cooked sufficiently to be self-releasing, usually 1-2 minutes.
- Do not use a fork to turn the meat as it will pierce the surface and result in juices being lost.
- Ensure poultry is cooked thoroughly.
- Place raw sausages or chicken in cold water and bring to boil and remove after 2 minutes before placing on barbecue, this is a tip to ensure both sausages and chicken are cooked through once browned on the barbecue.
